Cooking oil is plant, animal or synthetic fat that is often used in frying, baking and different types of cooking. It is used in food preparation and flavoring. Cooking oil is typically liquid when kept at room temperature, with some certain kinds of oil being an exception to this rule. Heating oil changes most of its characteristics. Oils that are healthy at room temperature can become unhealthy when heated above certain temperatures. Oils degrade in response to heat, light and oxygen. To delay the onset of rancidity, a blanket of inert gas is applied to the vapor space immediately after production.
